Pomegranate Pineapple Champagne Cocktail




I was experimenting with champagne and different juices the other day and confirmed that I really do love champagne. I found several great combos. And, the more I taste tested, the better they all were. You know how that goes, right?



So, since I might not have been the best judge the first time around, I shared this drink for taste testing today for Happy Noon Year with the kids.


I mean, the moms tested this out. The KIDS had sparkling grape juice.

I have to say, it was a success. When I first made them, I used Barefoot Moscato Spumante Champagne, which is already a bit sweet, so I knew that would be good. Today we used a Prosecco, which was a bit drier, and it also was quite tasty.

But, a little bit dangerous.



They're really smooth, which means I could easily drink one, then another, then another, and then wonder what happened to the rest of the night! Plain champagne, on the other hand, has a bit of a bite to it that forces me to sip and be civilized.


But, who wants to be civilized all the time, right?

Pomegranate Pineapple Mimosa

2 teaspoons pomegranate juice
2 Tablespoons pineapple juice
4-6 ounces champagne

Pour juices in a flute, then fill with chilled champagne. Top with fresh pomegranate arils if desired.

Serves 1.
