Blueberry Banana Smoothie


Grayson is on a frozen blueberry kick these days. It's his dessert of choice.

Yep. Frozen blueberries.

In a bowl.

Which he eats with his fingers. His messy, purple stained fingers.

But, it's a healthy treat, and he looks super cute with those purple stained fingers, so I usually let him have them.



Because the frozen fruit is such a hit, I decided to make a blueberry smoothie they could have for breakfast. Blueberry, banana and spinach, to be exact. No surprise, they love it.  I also had a little bit of wheat germ, which gives it a hearty texture, and a bit of honey to make it extra sweet and tasty.



This recipe makes a large batch. I usually make a full blender at once, then pour portions into sealable sandwich bags, which freeze flat nicely. I then transfer a bag to the refrigerator the night before, and it's soft enough for them to drink in the morning. It makes for an easy, fun breakfast.

Blueberry Banana Smoothie

2 cups frozen blueberries
2 large bananas
2 cups fresh spinach, rinsed
1 cup Greek vanilla yogurt
1 cup milk
1 cup orange juice
3 tablespoons wheat germ
1 tablespoon honey

Blend all ingredients until smooth. Serve immediately or freeze flat in resealable bags.

Makes approximately 6 one-cup servings.
